Samosa

These stuffed savory pastries are a traditional Indian favorite. Lamb meat and spices are cooked together to create a mouthwatering filling for the easy to make dough. The recipe may seem complex, but it's actually fairly simple. Enjoy!

Ingredients
  1. Two cups all-purpose flour
  2. Half teaspoon salt
  3. Two tablespoons butter
  4. One Fourth cup water
  5. One quart oil for deep frying
  6. Two tablespoons butter
  7. One small onion, chopped
  8. Two cloves garlic, chopped
  9. Two green chile peppers, chopped
  10. One tablespoon fresh ginger root, chopped
  11. One fourth teaspoon ground turmeric
  12. Half teaspoon chili powder
  13. Three fourth pound ground lamb
  14. ounce teaspoon salt
  15. Two teaspoons garam masala
  16. One and half tablespoons fresh lemon juice
Directions
  1. First Step
    • Combine yogurt, lemon juice, 2 teaspoons cumin, cinnamon, cayenne, black pepper, ginger, and 1 teaspoon salt in a large bowl.
  2. Second Step
    • Stir in chicken, cover, and refrigerate for 1 hour.
  3. Third Step
    • Preheat a grill for high heat.

    • Lightly oil the grill grate. Thread chicken onto skewers, and discard marinade.
  6. Fifth Step
    • Grill until juices run clear, about 5 minutes on each side.
  7. Sixth Step
    • Melt butter in a large heavy skillet over medium heat. Sauté garlic and jalapeño for 1 minute. Season with remaining 2 teaspoons cumin, paprika, and remaining 1 teaspoon salt. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes.
  8. Seventh Step
    • Add grilled chicken, and simmer for 10 minutes. Transfer to a serving platter, and garnish with fresh cilantro.
  9. Eight Step
    • Serve over rice.
